Winemaker's notes

Vineyard selection is critical with each vintage of Uncut. We select the sites that consistently display the highest quality, concentration and finesse. The biodynamically grown vines age from 20-80 years. Fermentation occurs naturally in 5 tonne open fermenters, pressing off skins once the fermentation is completed, which can take up to 20 days. Ageing occurred in 100% French oak barrels ranging in size from puncheons (500L) to barriques (225L) for 16 months maturation. As with all Gemtree reds, minimal racking occurs in this time, so the wine can be aged on its lees, building mouthfeel and texture and allowing sulphur additions to be kept to a minimum to showcase the true character of the wine.

The 3 Wines Men - October 2015
The 2013 Uncut Shiraz is for the true McLaren Vale lovers. Big and bold with dark plum and liquorice and pepper notes this is a perfect match for the biggest steak you can find. While I believe the 2012 is one of the best wines you'll buy for under $20 the 2013's time will come.
James Halliday Australian Wine Companion - July 2015
Attacks with flavour and doesn't let up. Inky, blackberried, clovey characters power throughout, tempered only by fruit-drenched tannin, saltbush complexity and meaty/smoky oak. It's almost exactly the wine you'd hope it to be. Rating: 94
The Wine Front Campbell Mattinson - July 2015
We've reviewed the 2006, 2008, 2010, 2012 and now 2013. Destroyed the pattern. This is joyous McLaren Vale shiraz. Great value, great for winter. A powerhouse of blackberried flavour, slipped thoroughly with smoky oak, with spice, with coffee-cream. Tannin rakes back through the wine, and gorgeously so. Bravo. Rated:94/100

It stood out in the tasting, was enjoyable as a glass and went very well with the pea and ham soup for dinner, need more be said? Rating 94
100 Best Australian Wines Report 2015-2016 Matthew Jukes - May 2015
Another exceptional wine in the Gemtree firmament is 2013 Gemtree, Uncut Shiraz. With cherry, tar and liquorice in abundance, this is a glorious McLaren Vale Shiraz with every element of its soul on display. Rich, full, succulent and vampiric, this is a hedonistic wine with a very fair price tag considering the grandiose fruit involved and also the degree of French oak employed. On of each and you have your dinner party sorted.
International Wine Challenge - May 2015
Fresh red cherry and dark plum fruit with dark chocolate and salty notes. Fresh finish.
The 3 Wines Men - May 2015
Another Gem from the good folks. Decanted for 45 mins. A dark yet vibrant colour, enticing vanilla nose courtesy of the 18mths in French oak as well as hints of fresh eucalypt. The palate has a multitude of fruits with blackcurrant standing out. There¡¯s coco powder & perhaps a slight anise finish. A full bodied Shiraz with great legs, a velvety smoothness as the tannins are all in balance. I think it will be even better in 12mths! 93/100

NZ Police News - Keen on Wine Ricky Collins - July 2015
This wine is dark and deep in colour. There are red and black fruits, some open wood-fire smokiness, and a hint of leather on the nose. On the palate it's full of interesting notes: dark cherries and plum, spice and tannic grip. It's quite complex and very interesting texture-wise, with some chewiness, natural acids and the fine tannins showing. It's well balanced with a long, velvety finish. It's an impressive wine with finesse that should develop well over the next five to 10 years. Rated: 4 stars
Langtons - June 2015
'This is a McLaren Vale powerhouse, with great depth to its layers of velvet black fruits, adorned by splashes of dark chocolate, licorice and cedar.'' 95 points.
International Wine Challenge - May 2015
Fresh red cherry and dark plum fruit with dark chocolate and salty notes. Fresh finish.
Raymond Chan Wine Reviews - November 2014
100% McLaren Vale Shiraz from vines 20-50 y.o., fermented to 14.5% alc., the wine spending up to 20 days on skins and aged 18 months in French oak, from barriques to puncheons in size. Very full, near impenetrable black-red colour with youthful purple hues. This has a full and densely packed nose of ripe black berry and dark raspberry fruits lifted by dark red florals and complexed by harmoniously interwoven mineral, tar and smoke detail. Medium-full bodied and elegantly proportioned, rich and intense fruit flavours of blackberries, raspberries, florals and minerals are balanced and supported by very fine-grained, supple and silky tannins. The palate has freshness and vitality, the ripe acidity enhancing the fruit sweetness, and the wine carries to a smooth, lingering finish of raspberries, tar and minerals. This is an elegant, succulent, satin-textured Shiraz with ripeness and vibrancy. Match with roasted duck, pork, beef and lamb over the next 8-10 years. Australian Certified Organic. 18.5+/20, 5 Stars
James Halliday Australian Wine Companion 2015
Estate-Grown and matured in French oak, this is a McLaren Vale powerhouse, with great depth to its layers of velvety black fruits, adorned by splashes of dark chocolate, licorice and cedar, the tannins perfectly balanced. Rating 95
Gourmet Traveller Magazine Huon Hooke - August 2014
This Shiraz epitomises McLaren Vale's generosity of flavour. With its dark red/purple hue and earthy, ripe fruit, spicy oak and iodine aromas, it's a tidy, appealing wine. The texture is smooth and fleshy, and it's starting to build complexity of flavour.
Dan Murphy Website - August 2014
Beautiful wine received as part of a champagne gift pack from Dan Murphy's for our 25th wedding anniversary from family overseas. All the wines were lovely but the Gemtree was a real standout with great depth & very smooth. We don't often drink a shiraz but would highly recommend this one particularly at this quality for this price
Dan Murphy Website - June 2014
A sensational McLaren Value Shiraz, full of flavour and sensational value for under $20 a bottle. Gemtree have returned to brilliant form with the 2012 vintage, can't wait to see how this performs with some time in the cellar.
Winefront Website Campbell Mattinson - March 2014
This release hits the groove and rolls with it from start to finish. Cloves, plums, blackberry and chocolate. You know the drill, and know if it's your cuppa. Tannin rumbles through the finish. Length is good. This is a very good (indeed, excellent) release of this popular label.
www.winewilleatitself.com Jeremy Pringle - March 2014
Quintessential McLaren Vale Shiraz executed with aplomb. If you like the style you¡¯ll like the wine. Mulberries, blackberries and plums exhibit the vitality expected from the vintage. Regional milk chocolate, earthy spice and fair clip of malty mocha oak. Plenty of flavour but no soupiness. The acidity is well judged and keeps things humming along nicely.
Dan Murphy Website - February 2014
What a great surprise. Didn't know the label before I tried the 2012 Shiraz. A mouthful of pure delight. Rich, beautifully balanced and almost "chewy". Although young, tannins are not sharp, drinking well now and can only imagine how good it will be in 5 to 10 years time. A ripping wine.
