Tasting Notes

Very few know who the Phantom is. Every year he leaves his mark on the McLaren Vale region through a unique blend - a blend of both red wine, and character. A master of disguise, he remains anonymous, letting the wine he puts forward speak on his behalf. He spends his days watching over the region undetected, sourcing the next secret blend recipe.

This is the wine that illuminates the ‘winemaker-as-artist’; the small batches of grapes are but colours on Mike’s palette, the means to create his vision. The blend will change year-to- year, the experience will remain the same.


Deep garnet.


A complex nose of French Saucisson, cassis and chocolate, with defined savoury and earthy notes.

Food Pairings

Meat: French sausage charcuterie.


This is a light to medium bodied wine with spicy red cherry, currants and mulberries. It shows elegance, with silky tannins and wonderful length from the cabernet.

Winemaker's notes

The Phantom was created in 2009 in an endeavour to satisfy part of our creative and innovative side. Consequently, the varieties and blends have changed each year since to reflect this part of our journey. In 2012 we introduced Mataro into the mix, which added a new personality to the blend, a certain intrigue and the definitely the x factor. We were so pleased with the results that in 2015 Mataro became the dominant variety. Fast forward to 2017 and the blend is now commenced in the vineyard, with the chosen varieties picked on the same day, co-fermented, and then aged to create harmony and balance immediately. The wine exhibits an element of mystic to us, we never really know what to expect! The Phantom label has become a series, each year we present an iconic location from our home, McLaren Vale and each year the Phantoms creator dons the now famous suit to be painted and masked in that unique location. The phantom and his blend will always be mysterious.
